Welcome to Scamarners, and thanks for the detailed posting. As ou say, it isn't a typical scam.
Can you quote the email including the headers, which will show where "she" is. Scammers lie, and claiming to represent a genuine business isn't unusual. Although I only get one Google hit on "Ayudhya Allianz insurance company" and no business website. Free hotmail address too.
I'm not that convinced by the photo either. It looks too professional.
